The cashew tree, native to South America, is an evergreen that can grow up to 10-12 metres tall with a crown spreading up to 25 metres wide. It produces two fruits: a fresh one known as the “cashew apple” and a second one which we recognise as the “cashew nut”, which is exported after drying. The cashew nut has a very tough outer shell that encases the edible kernel. The tree starts bearing fruit in its third year and reaches full productivity by its tenth year, yielding around 48 kg per year. The ideal climate for cashews varies from warm-temperate zones to tropical climates to equatorial rainforests, and requiring temperatures between 24°C and 28°C with minimums of 17°C and maximums of 38°C, making them intolerant to frost.
In producing countries, the so-called “false fruit” is also used, and is consumed fresh or processed into jam. In Brazil, a tangy juice is extracted from the fruit, which can be consumed directly or fermented. Interestingly, this juice darkens and can be used as ink when exposed to air. Cashew kernels yield valuable edible oil, similar to many other seeds. Additionally, the wood from the cashew tree is highly prized for its insect-repellent properties and is used in making furniture and boats.
Try having cashews for breakfast with fresh fruit and yoghurt, or enjoy them as a snack. Toast them in the oven for a delicious snack or appetiser.

The tree is native to the Amazon basin in northeastern Brazil and is grown in tropical regions worldwide. The main producers [Faostat, 2022] are Senegal, Togo, and Kenya.

Organic cashews should be storedin a cool , dry place, away from sources of heat and moisture. They can be stored at room temperature during the winter when temperatures are cooler, but it is advisable to store them in a refrigerated environment during the summer, as higher temperatures accelerate product deterioration.
Glass has proven to be the best material for storing cashews (and nuts in general) because it is resistant to chemicals and gases, and it provides excellent insulation.
Coloured glass is preferred as it blocks certain light wavelengths , including ultraviolet light, helping to preserve the product’s nutritional and flavour qualities. Proper closure of the container is also important: an airtight seal prevents excessive oxygen exposure, which can cause the cashews to become rancid due to lipid oxidation.
