The 100% cream

Serves: 1 loaf
Ingredients
220g whole wheat flour
20g shredded coconut
1–2 ripe bananas (about 180 g)
40g 100% hazelnut spread
90g plant-based milk
60g brown sugar
1 sachet baking powder
5 ml vanilla extract
Cinnamon as needed
For garnish
1 banana
Brown sugar as needed
Method
Mash one banana with a fork until smooth.
Add hazelnut butter and brown sugar.
Mix until well combined.
Add flour, shredded coconut, baking powder and cinnamon.
Pour in plant-based milk and vanilla extract.
Mix until creamy and smooth.
Pour batter into a loaf pan lined with parchment paper.
Slice the banana lengthwise and place on top.
Sprinkle with brown sugar.
Bake at 190°C for about 30 minutes.
Let cool before serving.
