When it comes to nuts, one of the most common questions is whether raw or roasted is the better choice. From a sensory perspective, there is no single correct answer. Both options have specific characteristics that influence flavor, stability, shelf life, and safety. Understanding what truly happens during roasting helps consumers make a more informed decision and appreciate this food in everyday life.
Raw and Roasted: What Really Changes
Scientific literature describes nuts as a source of plant proteins and liposoluble bioactive compounds such as unsaturated fatty acids, phytosterols, and phospholipids. Depending on the variety, they are also rich in dietary fiber, vitamins including folate, niacin, vitamin B6, and vitamin E, and minerals such as calcium, magnesium, and potassium.
Nuts contain a high percentage of fats, on average around 50 percent and in some cases up to 70 or 80 percent, which makes them energy dense foods. It is important to note that most of these fats are unsaturated fatty acids considered beneficial for health, including essential fatty acids.
Raw nuts are simply nuts that have not undergone a roasting treatment. This does not mean they are unprocessed. After harvesting, they are always dried to reduce moisture and ensure stability over time.
Roasting, by contrast, is a controlled thermal process designed to precisely modify certain product characteristics. At industrial level, nuts are typically roasted at temperatures between 130 and 170 degrees Celsius, depending on the variety, size, and desired outcome. There is no one size fits all approach. Each type of nut has its own optimal window, defined by its natural composition and the aromatic profile to be achieved.
One point often misunderstood deserves clarification. During roasting, no oils or fats are added. Nuts develop aroma, color, and fragrance solely through their own natural oils. The addition of oils would constitute frying, not roasting.
Time, Heat, and Control
Roasting is neither rushed nor aggressive. It can last between 15 and 40 minutes, as gradual roasting helps avoid thermal stress and preserves overall quality. The goal is not to roast more, but to roast correctly.
From a technical standpoint, industrial roasting systems may operate continuously or in batches, differing in flexibility and production volume. In continuous ovens, the product moves along conveyor belts, rotating drums, or vibrating systems, and roasting time is mainly determined by belt speed. Batch ovens unload the product once roasting is complete and reload it in defined batches. Proper parameter setting is essential to achieve uniform roasting.
Cooling: A Crucial Step
A less visible but central aspect for laboratory professionals is post roasting cooling. Once heat exposure ends, nuts must be cooled rapidly and in a controlled manner. This phase stops thermal reactions and stabilizes the product, preventing residual heat from continuing to alter structure and aroma.
Nutrients, Aroma, and Safety
From a nutritional perspective, roasting may reduce some heat sensitive vitamins, while proteins, minerals, and unsaturated fats remain largely present. A 2025 study evaluating antioxidant capacity in roasted nuts showed that antioxidant activity can increase compared to raw nuts, due to the formation of compounds with antioxidant properties such as certain phenolic compounds.
Phenolic compounds are among the most important indicators of nut quality and, together with flavonoids, contribute to the characteristic color, flavor, and aroma developed during roasting. The balance between degradation of natural antioxidants and formation of new antioxidant compounds depends largely on how roasting is conducted.
Roasting also generates natural aromatic compounds that intensify fragrance without the addition of external flavorings. This explains why roasted nuts are often perceived as richer and more satisfying from a sensory standpoint.
Roasting plays a role in food safety as well, contributing to the reduction of the product’s natural microbial load. This does not imply that raw nuts are unsafe, but roasting provides an additional safety barrier, particularly useful for products consumed frequently.
Storage, Oxidation, and Stability
Nut preservation depends mainly on moisture content, water activity, and fat oxidation.
Because roasting reduces moisture content, roasted nuts generally have lower moisture levels than raw ones. Moisture is verified in the laboratory for every incoming batch of raw material, and each nut variety has specific limits to be respected. Excessive moisture can promote mold growth and mycotoxin development.
Another fundamental parameter checked in laboratory analysis is water activity. This value indicates the portion of water in the food that is actually available for microbial and chemical reactions. High water activity may encourage mold growth.
Factors influencing oxidation of fatty acids, particularly unsaturated ones present in nuts, include heat, light exposure, and oxygen. For this reason, roasted nuts may be more exposed to oxidative phenomena and potential rancidity compared to raw nuts. During packaging, the use of protective atmosphere and non transparent films reduces exposure to oxygen and light, thereby supporting shelf life.
Raw or Roasted: A Conscious Choice
In everyday life, the choice between raw and roasted nuts depends on intended use and personal preference. Raw nuts are often appreciated in cold preparations or for a more delicate flavor. Roasted nuts are ideal as a snack or in recipes requiring stronger aroma and enhanced crunch. Some people perceive them as easier to chew due to structural changes, although this remains subjective.
When nuts are transformed into a 100 percent spread, roasting quality becomes even more evident. Without additional ingredients, defects cannot be masked. This is why monitoring parameters such as moisture content and color index is essential to achieve a balanced sensory profile.
